Naughty Corners Fried Chicken & Chips

Half fill your Dutch Oven with vegetable oil and begin to bring it up to temperature.

Dip you chicken portions in some milk then into some Jamaican spice coating (available from most good supermarkets) making sure you give it a good overall covering.

Check your oil is up to temperature buy dropping a bit of the doughy spice mix in, if it bubbles fizzys and starts to go golden brown then your good to go. Gently lower the chicken into the oil as you don’t want it to splash back at you, a large slotted metal cooks spoon is perfect for this. Cook for about 20-25 minutes until golden brown. It’s always a good idea to check the chicken is cooked through with the deep prod of a skew or knife if the juices run clear then it should be done.

Remove the chicken and keep warm. Keeping the oil for the chips.

You may like to cut your own chips from fresh spuds but to be honest a pack of frozen saves a lot of time. Again gently lower them into the oil and cook until golden brown, generally about 7-8 minutes.

Add a good dollop of the red stuff, Enjoy.
